When completing the Mob Kabob achievement, the achievement requires us to charge five creatures at once, so in the game, we can earn this achievement by charging five creatures at once.
However, when we fight the Ender Dragon, if the Ender Dragon charges at me and I raise my spear at that moment, the game will mistakenly give me the 'Mob Kabob' achievement.
Since the Ender Dragon in the game is not a single creature but is made up of a bunch of Ender Dragon parts, if I were to dash with a spear and consecutively hit five Ender Dragon parts, it would count as five creatures and grant me the achievement. However, the Ender Dragon is very special because it is composed of multiple components, so I believe that even if I pierce through five Ender Dragon components at once, it should not award me the achievement.
In addition to Ender Dragon components, items like TNT, End Crystals, large fireballs, wind blasts, boats, minecarts, armor stands, and Wither skulls can also complete this achievement. It's quite strange, though they all are considered entities.

Because I am in a region with restricted internet access, I am unable to upload videos, and it displays the message: 'We couldn't submit your request. Refresh the page and try again.'
If you summon five entities in a line—these entities include ignited TNT, boats, minecarts, armor stands, fireballs (like the ones shot from a ghast), shulkers (thrown by players), multiple overlapping End Crystals—and sprint toward this line while holding a spear, you will get the Mob Kabob achievement. This can be done more easily in Creative mode.
It might be a bit more complicated for the Ender Dragon. You need to raise your spear when the Ender Dragon charges at you. It will make contact starting from its head. If you are not knocked back by the Ender Dragon, after it passes through your position, your spear will hit five parts of the Ender Dragon, allowing you to earn the achievement.
We do not have enough information to find the cause of this issue.
