When you collect honey and bees are inside beehive, their aggression is not timed out and it is imposible to get away from them. In 1.21.10 aggresion was timed out after about 30s and they went back to their job.
Probably caused by fix to https://report.bugs.mojang.com/servicedesk/customer/portal/2/MC-304599
As a result my children cry :(

No addons, no resurces packs, 1.21.11 vanilla runned locally.

Could you please provide more details or/and media files. As we have no repro of this issue, according to the wiki Bees become neutral if they fail to land a hit on their target within 25 seconds.
Could you please record a video of the issue and upload it?
Are you using any add-ons or resource packs? If so, could you provide a complete list of them?
