Had a melon with full grown seed next to it. Destroyed the seed, got 2 new. Planted a new one and replanted the old one. It was instantly as big as before, and it changed it's color.
UPDATE: Destroyed the melon, seed is small now. I think it was a graphic glitch.

Seems like the game gets the image of a connected crop even if the crop isn't fully grown which cause at the beginning a incorrect color
