When attempting to drink a potion in any gamemode, the animation plays and appears to work, however the potion is not consumed, no effects are applied, and "stat.useItem.minecraft.potion" scoreboards are not incremented.

In singleplayer? I understand that it still uses the server-client system, but that's highly unlikely.
As it turns out, the animation is simply shorter than the time necessary to drink it, and as my sound was off I couldn't tell. Still needs fixing, but it isn't as severe as first thought.
