When starting Minecraft Java Edition from launcher, the loading screen appears, switches to full screen, then when the loading bar finishes, the computer reboots entirely. When the launcher is accessed, it requires a full login and password again (though remember me was checked). This is reproduceable. Minecraft Java version is 1.16.2.
The work around I have is to edit the options file to have "Fullscreen: False" to start in window mode. Then it starts without issue. I am able to change the in-game options back to full screen and play, but if I do not change it back before logging off, it will crash to reboot again on next attempt to play.
I see no other conflicting programs and this problem only occurs with this game. I have done a clean install and clean startup and the problem persists. Event viewer shows no application errors, due to the nature of rebooting entirely.

Hi there!
Could you answer few questions regarding this issue, it will help with the investigation:
Does this issue occur on the newest version of the Launcher?
Does this issue occur on minecraft.net website/MS store version of the Launcher?
Have you tried to install Launcher from the minecraft.net website/MS store?
Have you tried installing older version (Windows 7/8) of the Launcher?
Are you logged in in both Xbox app, MS store, and Launcher with the same MS account?
Have you tried signing out of all your Windows Apps, and the signing in again?
Is your Windows and associated apps (Xbox app, MS store) up-to-date? Please check for Updates regardless.
Is your graphic card drivers up-to-date? Please check for Updates regardless.
Do you have enough free space on your disc drive?
Do you use VPN or any of the incompatible software on machine you try to log-in?
Could you provide us with more in-depth repro steps?
What I also suggest: disable all of the overlays like: Discord, Nvidia (or other graphic cards) overlay + be sure to turn off all of the program which can affect graphic settings like programs which read temperatures and cpu/gpu load.
This ticket will automatically reopen when you reply.
There ios no crash-report generated due to the nature of the reboot and Event Viewer doesn't log an error either. I have attached the launcher log.
