[MCL-18330] Java edition has a bug when attempting to play

After completing installation, the play function would not lead. An errir message appeared. "Whoops! Sorry, something......................encountered a bug. Try Again does not resolve the issue

I have this too, maybe it's something with the Minecraft server because it's pretty recent?

Edit: it appears to be fixed

I don't know if this will be of any help, but I deleted the download of minecraft from my mac and then re-download it from the alternate link. It seem to do the trick for me as it downloading the demo.
