ever since i changed the email that my microsoft account is connected too launcher has bees saying "oh no something went wrong and we could connect to minecraft services" at the very bottom of the screen

Do you still get the error at the bottom, "Oh no! Something went wrong and we couldn't connect to the Minecraft services?"
yes and now it makes me play the demo version of the game

Could you try to reinstall the Launcher? After deleting it, find .minecraft and delete the file - what is important that this file should be deleted from the trash bin, because corrupted files from the old .minecraft file may interract with the newly generated .minecraft file.
Could you try to download the Launcher from Microsoft Store and see if the issue occurs there?
Does this issue occur on minecraft.net website/MS store version of the Launcher?
Have you tried signing out of all your Windows Apps, and the signing in again?
Is your Windows up-to-date?
Do you use VPN or any of the incompatible software on machine you try to log-in? https://minecrafthopper.net/help/known-incompatible-software/
Could you provide us with more in-depth repro steps?

ive tried uninstalling and reinstalling multiple times ive also tried downloading the launcher from both minecraft.net and from the microsoft store and it still gives me this issue
however i have not tried deleting the .minecraft folder i will tell you what happens once i do that
i just tried deleting the .minecraft folder and then reinstalling the launcher after i deleted it and it is still giving me the same problem

if you see this now it is saying that i havent bought minecraft when i have because i was playin this morning and now that i try to play again it is making me play the demo version of the game
