When I login with the new launcher without the .minecraft folder, it does not generate a lastlogin file so I have to type in my email and password every time.

The new launcher will never store your password on disk, however as a workaround you can login once with the old one and it'll use that file to figure out the password.
This until the new authentication scheme is implemented (that just stores a token).
