The launcher says I haven't bought Minecraft, but I have it in the Microsoft Store, and it still won't let me play Minecraft.

Theres a very simple solution to this! you just have to click on ‘'Play demo’' but it just launches the normal game, not the demo. After you launched the game with the play demo button, it should go back to normal (that was my case)
