The documentation for items isn't really up to par and there are several new components missing such as;
minecraft:creative_category
minecraft:allow_off_hand
all of the pre 1.16.100 documentation
and probably more I've yet to find

Documentation is more along the lines of the new Blocks documentation and all extra components are listed
