For some reason these trophies are not unlocking. I tried uninstalling it and repeated the process 3 times and yet no trophy. The frustrating part is that I can't access the older versions before the updates to attempt in getting these trophies. Ever since the new updates I feel these glitches are getting worse.

Please put only one bug report in each ticket. It is very difficult to keep track of bugs when they are not in their own tickets. Each achievement / trophy has its own requirements and bugs are tracked separately.
However, please review the Bug Tracker Guidelines before creating new reports. Be sure to search for an existing issue as it is likely to have already been reported. In particular, inability to obtain Rainbow Collection is tracked as MCPE-30718.
