Piglins put on Soul Speed boots instead of giving them to you

When you barter with piglins, one of the items they can give you is Iron Boots enchanted with Soul Speed. However, since piglins pick up armor that's in item form and wear it, when a piglin barters these enchanted boots, the piglin will immediately equip them instead of letting you get them. You'd then have to kill the piglin and MAYBE you'd get the boots.
