When a item is thrown into lava with oak signs under it and hoppers under the signs, the hoppers can sometimes pick up the items after it falls through the lava.
Edit: I expected the items to burn up and disappear upon touching the lava since it visually has the appearance of being on fire.

Also reported for Java Edition at MC-99441.
Items have 5 health. Lava does 4 damage every once every 10 ticks (half second). Lava also catches entities on fire, but damage from different sources within the same half-second does not add (this is known as the damage immunity time). As a result, an item stack can be collected for up to a half second after it touches lava. For the same reason, you will find that an item stack can be collected into the player inventory after touching lava in some cases.
I expect this behavior is working as intended. For one thing, it gives a bit of wiggle room to prevent items from accidental destruction. It is also useful for things like sorting items from xp and automatically breaking minecarts without destroying them (see for example MCPE-94879). Finally, if items and lava did not behave this way, you would never actually see items items burn in lava—they would just disappear. Items having 1 more health than lava can take in one “hit” gives them time to show the burning animation.

What do you expect to happen instead? Some items probably fall fast enough through the lava that they don't have time to burn up.
