When you tap on the Clear Account Sign in Data button, the button becomes selected in green but nothing will happen. I am unsure if this is just a bug on Kindle Fire or if this is a bug on all devices because I only have a Kindle Fire. Someone in a youTube comments section said it happened to them on Android (im not sure what version), so that would be worth checking out when fixing this bug.
I am not able to attatch screenshots because I can't transfer them onto my MacBook but i hope this description is good enough.

Yes. This is still an issue in the latest update of Minecraft bedrock edition. I have tried to clear account sign in data and it still doesn’t work. This is also a problem for PlayStation 4.
Steps to Reproduce:
Open Minecraft bedrock
Go to settings.
Enter the Profile screen in settings.
If you are signed in to any Microsoft accounts sign out of them.
Press the "Clear account sign in data" button.
Observed Results:
Nothing happens...
Expected Results:
A text box should appear saying if you want to clear the sign in data.
I have added the version 1.17.10 in the affected versions list. I tested it again and it's still broken
The "clear sign-in data" button doing nothing on Playstation is tracked at MCPE-96635.
I just checked to see if this is still an issue, and the button doesn't even exist anymore, it's been removed?
The button is still there for me. Did you make sure you were signed out of your Microsoft account? The button only appears when you're signed out.
Is this still an issue in the latest version (1.17.10)? If so, can you please add it to the affected versions (or mention it if you are not the reporter).
