Well here it goes, I have several villagers with books to enchant, but there comes a point where they don't trade me anymore, I've done everything to get them to trade again, sleep, put a bed for them to sleep, make sure their tables aren´t blocked by any block, but simply their stock don´t re-fill, what can I do

Did you sleep in the only nearby bed? That is often the cause if this. If you sleep in the only bed you destroy the village, and when it recreated the workstation links will not be the same.
If you want to attach a copy of the world export we can check that, but it’s most likely that the villagers simply are not linked to the workstations in front of them.
