There was a update and all of my villagers trades changed even if they where locked. Some villagers lost levels and some gained them.
this only happens to worlds with existing villagers. I have reloaded the game multiple times but it still has the same unwanted trades.

I just recently encountered what I believe is this issue on Switch with the latest version. Upon loading the world most villager trades/levels appear to have been reset. Villagers still existed and had same job distribution, but levels and trades were all new including villagers I’d isolated for trading with only a couple exceptions. It spanned multiple chunks and villagers not reset don’t appear to meet any consistent criteria. I have nothing solid for the cause/conditions but I had just been in the nether for an extended period of time before encountering it.
