The latest Java snapshot 21w40a changes the ore distribution once again, like the following:
Copper Ore now generates between Y=-16 to Y=112, generating the most at Y=48, and increased the number of blobs.
Added more unexposed Diamonds.
Decreased minimum generation height of Emerald Ore from Y=32 to Y=-16, and increased the number of blobs.
Extra gold generates below Y=-48.
Decreased minimum generation height of the upper range of Iron Ore from Y=112 to Y=80, and increased the number of blobs.
Bedrock Edition hasn't got these changes so far, which breaks parity.

Hopefully the Bedrock betas can match the newest Java snapshots. I especially like that deepslate coal, copper, and emerald ore blocks (the silk-touched unsmelted form) can still be found in 1.18 Java survival!
Resolving temporarily as Awaiting Response. Could you please add some example seeds and coordinates for the iron ore issue? Additionally, could you attach some screenshots showing the bug? I compared a mountain on Beta 1.18.0.22 and the 21w42a snapshot, and I don't think there's a significant difference between the two versions.
Here are the results of my test:
(y range : number of iron ore blocks)
Bedrock
150+: 44
140-149: 124
130-139: 196
120-129: 252
110-119: 252
100-109: 401
Java
150+: 29
140-149: 106
130-139: 144
120-129: 200
110-119: 286
100-109: 379
Decided to reopen the ticket, despite the iron ore distribution is a bit similar to Java now, need more testing to find a conclusive result.
Not only that, the emerald ore distribution remains unchanged in the recent beta so far.
Here is some analysis of ore counts for several thousand chunks in Bedrock beta 1.18.0.22. As you can see, emerald ore is not distributed much below y = 50. Deepslate coal, copper, and emerald are completely missing in the world.
[media]I analyzed a new bedrock world from the 1.18.0.24 beta When deepslate ores are considered, it appears Bedrock has approached parity with the Java snapshot as described by the original poster. Here is a table detailing the block locations at the minimum, maximum, and mean values and histograms of ore generation by y-value.

Most of the distributions are now correct, however, the emerald distribution is still using the old one, and the iron upper distribution isn't quite matching Java either.
