I found old tickets (see Bug History below) on this matter that were marked Invalid or Incomplete. So here is a more detailed ticket.
Observed Result:
Zombified Piglins do not try to destroy Turtle Eggs
Expected Result:
Zombified Piglins try getting to Turtle Eggs to destroy them.
Steps to Reproduce (skip a few if in Creative):
Enter a world or realm where the gamerule Mob Griefing is ON
Breed 2 turtles using Sea Grass (shears or silk touch)
Once the turtle lays eggs, use a tool with Silk Touch to collect them
Go to the Nether and find a Zombified Piglin (a.k.a.: Zombie Pigmen)
Place the eggs near the mob
Watch as the Zombified Piglin ignores the egg entirely
Bug History:
This bug have been reported in Bedrock version 1.16.221 Hotfix (MCPE-127710) and PS4 version 1.93 (MCCE-10064). I discovered this on Bedrock version 1.19.20 today on Xbox. However, it's worth noting the history of this issue.

Hey EVGENSYPERPRO,
After doing some testing, it appears that they apparently can detect block heights in their pathfinding? So it you place an egg and place a block above it with a 1-2 block gap, pigmen will ignore it. But the moment block is removed, they go to break the egg. Is this something new that I've missed? Because it also applies to the scenario of a 2 block high gap leading to a 3 block gap (where egg sits). If Pigmen pathfind that they cannot walk over the egg, it is also ignored. So this one for farm design (seen here) made in an earlier version doesn't work.
