There are no on screen controls visible on my kindle edition. The controls used to be there but they've disappeared.

Can you see your hand/block you are holding in first person? If not you may have the Hide GUI option on in the graphics settings.
This is happening to all 3 of my kids on their kindles. They have to leave and come back. Not the GUI setting.
