There seems to be a bug within the 1.19.30 update causing players and mobs to have a laggy behavior when moving around, or really doing anything.
All Mobs will have either stop moving for a second or two, or they can be seen in the distance bouncing weirdly/(moving up/down repeatedly and fast), from what I've seen, both apply to all mobs.
And players on multiplayer or LAN worlds seem to have the same bug.
Before the 1.19.30 update I could play on my family world without an issue, and on my single player world the same thing seems to be happening.
Update: some of the lag seems to be caused by the maps.
How to reproduce:
Step one: put a map in your off-hand slot.
Step two: find a mob.
Step three: see if it seems more laggy than useual.

I noticed chunks load very slow too for no reason when before they would load immediatley. I also checked other old worlds I have and in some all mobs move in slow motion and there's insane lag and in others they move fine and no lag. My system is not the issue, I can normally spawn in hundreds of mobs without any lag. Fps are normal, it's only the world and mobs that lag.
I have found out why the lag happens. The mobs start lagging as soon as I hold my level 4 map in my offhand, when I remove the map all the lag in the world is gone and it runs perfectly smooth again. If it's the same issue it is related to maps being held. Can you try out if it is the same in your world?

I am having the exact same issue on my local multiplayer world. Mobs and player movements are slow and they seem to freeze every few seconds. This wasn't an issue before 1.19.30 as far as I can tell.
System is Windows 10, never had similar lag issues there before.
