All mobs exit boats, not just the ones that are too big. This also only affects the worlds imported to the Preview, not worlds imported/exported around the base game.
Correction: this affects many versions, not just the ones in the preview. If you have mobs in boats, especially discontinued ones, like spiders, polar bears, Hoglins, etc, DO NOT OPEN YOUR WORLDS. I only hope this bug is fixed soon.

Reproduced saving a world in 1.19.83 and then opening in 1.20.0 and 1.20.10.21 Preview. Does not affect Minecarts, only boats.
I would guess that this occurs because there is a new boats.json entity file in 1.20, so the boat entity gets recreated when it is first loaded in that version.
Reply to GoldenHelmet on possible cause; so you mean that the addition of new boats will cause the problem? Also, is the damage done when you update, or when you open the world?
When it comes to not being able to get in the boat, it will work for certain individuals when I play local split screen, but only for that particular profile.

My ticket MCPE-171767 has been flagged as a duplicate of this one, but like many of the others that have been flagged as duplicates on this ticket, it relates to a very different bug/output, even if it is possibly being caused by the same issue. My issue relates to not being able to use existing boats which do not contain a mob, whereas this ticket is around the mob ejection issue. Not precious, just hopeful that both bugs are being looked at within this as my issue is not referenced in the description of this ticket at all.
