The RAM usage is slowly increasing in Minecraft Bedrock 1.20.71 until no more RAM can increase, then the fps drops and become lag.
I think it is not the problem of my Minecraft world, because the memory usage is still slowly increasing when Minecraft is on the title screen.
And then I have reinstalled Minecraft but the problem is still on here.

Btw, I have tested it on an iPad gen 9, and when the iPad 9 opens the 1.20.71 Minecraft, it crashes.I think it doesn't only effect the Windows version of Minecraft Bedrock 1.20.71, It also affects the iOS/iPadOS version.

I cannot reproduce this on Windows 10, i5-8500, GTX 1050ti. While running my moss-bonemeal farm Minecraft is only using 585 MB of RAM. Perhaps this is an RTX-related issue?
I have just installed the Windows updates and the problem solve, maybe it’s the problem of the Windows build. But, my iPad 9 is still crash when open Minecraft.I think this thread can close now until the problem reappear.
This happens to me as well. I load into a world (old world and brand new world) cpu goes to 100% utilisation and then RAM fills all the way up.
Windows 11,
CPU: Intel 13600k
GPU: RTX 4060 TI
RAM: 32GB 3200MHZ
I get near 100% RAM usage when I start sliding the boat on ice to travel quickly in the overworld, (generating chunks perhaps, or uncovering terrain).
Then the 100% ram usage goes down veeery slowly down and down, to the point where resetting the world is a better choice than waiting. It's weird
There should be an option added to limit max memory it can use.
I have the same issue. I play on Minecraft Bedrock, and it is eating 12GB RAM to 16GB RAM. I only have 5 Add-Ons active.

Hey guys, here’s a fix that worked for me. I play with a few global resource packs. Some of which I noticed were the reason it was taking up a lot of RAM. What worked for me was turning off “Use Recommended texture limit” option in Settings > Video.
Before, It used to take upto 12/16 GB of my RAM. Now it comfortably surfs around 2-3 GB in the same world. Give it a go and let me know, hope it helps!
Do you have the "Improved Input Response" option enabled in Settings > Video?
