Seems to still be happening after the “Chase the Skies” update on June 17th. The ore looks blue-ish from up close. Attached are my current options.txt file with the VV settings.

I was able to correct this by replacing \textures\blocks\nether_gole_ore_mers.tga with a copy of \textures\blocks\netherrack_mers.tga using a custom resource pack.

This occurs because nether_gold_ore.mers.tga has 64 added to the metallic (red) channel across the entire block. The metallic channel should be 128 on gold pixels and 0 everywhere else. Instead it is 191 on gold pixels and 64 everywhere else.

(The overworld ores gold_ore_mers.tga and deepslate_gold_ore_mers.tga have 128 in the metallic channel for the gold pixels.)

gilded_blackstone_mers.tga has the same issue with 64 across the block and 191 in the gold flecks: see (MCPE-227677).
