The copper golem will pick up an item and if it can’t find a matching item in any chest it will just walk around with it and won’t put it back in the copper chest (which it should in theory do (the only way to get the item back is to kill it). In theory this would be better if it could be sorted via items of the same or similar. Or at least put the item back :)

Returning items to the copper chest that it took them from was not stated in the changelog as part of the copper golem’s behavior. Moreover, if it returned the item, it would just take it back out again. That would be worse, because it would look like it was working while actually being stuck in a loop. It’s better that it holds on to the item so that you can see that you need to set up a new place for the item type or fix its access to chests.
In general, the copper golem is not intended to be the AI of a self-organizing sorting system. It’s function is much simpler than that, but you can combine it with hoppers and redstone components to create a complex system.

This seems to be intentional game design (from my single perspective). If you want them to return non-sorted items, place a chest that has a hopper below it. As long as a chest is empty, the golems will place the items in that chest. The only problem is that they will do this even if a nearby chest has a match (they place items in the first chest they can). Solution: place the “returned items chest” with hopper as far from the copper chest as possible.
