This key should be inherited from the ominous bottle.
Common - white
Moderate (Uncommon) - yellow
Rare - cyan
Epic - pink
Ominous bottles can be obtained from normal vaults and raid captains. It has a moderate rarity.
After drinking the bottle, the trial spawners will turn blue, indicating that they are ominous.
After defeating these special trial spawners, you will get the ominous trial key.
Unfortunately, the “Ominous Trial Key” text is white, not yellow.
This special key requires the Ominous Bottle, which can be found in the illager's lighthouse.
Expectation: the “Ominous Trial Key” text should be yellow, which is inherited from the Ominous Bottle, whose text is also yellow.
Reality: the “Ominous Trial Key” text is white.
This bug can also be fixed on the Java version, aside from Bedrock version

However, this is currently Working as Intended.
It's true that Mojang Studios have given general rules they considered for assigning rarity, but in the end it's an arbitrary definition.
Item rarity was reworked in snapshot 24w33a for Java Edition, which already included ominous trial keys. While it may look a little odd, it is currently the intended design.

The same can be true for all the other items you get from ominous trial spawners like the food and the potions. Then there's no point in changing it especially potions are a lot more rarer than ominous trial spawner keys when the player defeats the ominous trial.
There’s a 30% chance to get 1 Ominous trial key.
But there’s a 7% chance of getting a potion or strength or regeneration.
Golden Carrots are a 14% chance and baked potato's and steak are both a 21% chance.
This isn’t a bug and it doesn’t need to be changed as the other rewards are rarer but have the common white colour.
