Piglins Attack Copper Golems That Open Chests

If a Copper Golem, a chest, and several Piglins are placed in the Nether, and the Copper Golem opens the chest, the Piglins will become hostile to the Copper Golem.

This may be intentional. I don’t see why piglins should distinguish between players and copper golems.

It isn't clear if this is intentional or if its a bug. But I think this works as intended as the 1.16 changelog says:

  • Piglins are suspicious of strangers and if they see you opening a chest or mining a block of gold, they will assume that you're stealing and will treat you accordingly

It sates “strangers” so that could be anything that can interact with a chest (a player or copper golem).

I can understand why this could be a bug but it seems weird if it only applies to players and not copper golems

I don't know why, but this issue can't be reproduced 100% of the time. Maybe something was just misunderstood or mistaken somewhere.

However, this issue is Working as Intended
Opening the chest by any entity may upset the Piglins.

Please note, that mechanics of the game may change between updates. 
Things such as graphics, sounds, world creation, biomes, redstone, villagers, and animals may not work the same in current versions.
