This bug has been appearing with the new Copper Age update, where Character Creator outfits resets to Steve, or other default clothing (eg. Zuri’s shirt, Black Pants).
Steps taken:
Launch Minecraft
App signs into MS account, loads avatar.
Glitch: Avatar clothing resets to Steve or Default.
Set clothing again. Play Minecraft as normal.
Exit Minecraft completely.
Return to Minecraft, glitch in point 3 occurs again.
I’ve repaired Minecraft at least once via Windows App Settings. Issue happens no matter what World I play in, as the Outfits resets at the Main Menu. I have no mods installed that affects user appearance or behaviours.
Before this glitch, outfits tested (and saved, although apparently not) included Minecraft achievement unlocks (eg. Lumberjack Shirt, Toolbelt Pants) and paid items (eg. Vector’s Jacket from the Minions). Only the head part (hair, base, eyes etc.), and default Outerwear remains intact.
I haven’t found anyone encountering this, but similar issues have been plaguing Character Creator for sometime, although this never happened before the Copper Age update.

About once every 10 sessions, the outfits loads in normally, but still incompletely. I would say otherwise that this issue is still persisting.
I’m having a similar issue where I have to re-equip my hair, base (skin), shoes, and back item every time I load the game. Playing on Windows 10 here.
