So I have MC Win10 open, but whenever I leave it alone for a long time, when I get back to the game it freezes and I have to close it....

Are you running the game in fullscreen mode? If not, are you leaving it in a minimized, maximized, or restored window? Have you turned on Game Mode for Minecraft?
When you minimize the Minecraft window, it releases memory to allow other applications to run. Later, when you restore it, it has to reload all the memory it released. This takes even longer if you're running it in Game Mode. While it's reloading, the game will be unresponsive and appear frozen. Have you tried waiting for a minute or so?
If you leave the game in fullscreen mode or a restored or maximized window, the game won't release memory, but if other tasks are competing with it for memory Windows may page it out during long periods of inactivity. This will also cause it to have to be reloaded, but the delay should normally be brief and the game would typically not appear to be frozen, just slow--unless your virtual memory size is too large for the amount of installed RAM.
