When you attract an animal's attention with food, they follow you. when forced to jump or fall a block, they immediately lose interest. This works with all of the main animals: Sheep, Cow, Chicken, Pig.

So they can jump and down elevations now, as noted in the changelogs, while interested in food, but as soon as they have landed they will walk away again.
