I have the same issue. When you get above y 80 or 90 you can’t see the ground. Flying in the end is soooo scary. LOL Just don’t panic and adjust your pitch too much or you’ll nosedive into the void.

Could this be related to your render distance? Have you tried adjusting that to see if it improves? (Bear in mind it may be limited, and varies depending on the device and it's available memory)
