Sometimes when you exit and save game, and load the world, randomly your inventory and xp is reverted to your old one or empty, this also can apply to other player.
(I can't post a screenshot because it was very rare)

I had this issue too! I spawned back into my world with no armor and an empty inventory. There was no way of getting all that back. I was on a single player map on XBox One
