When I compare stripped logs with normal logs, the spruce stripped logs and dark oak stripped logs are darker than the normal versions.

Note: Experimental Gameplay must be enabled to obtain stripped logs.
For most kinds of wood, the color of the stripped sides resembles that of the inner wood, but for spruce and dark oak logs, it resembles the color of the bark. This is likely intentional, as it gives a better color coordination between stripped and bark logs, but it's inconsistent with how bark stripping works IRL and also with how oak etc. work.
