Grass blocks placed at certain coordinates in old worlds have a darker color on their sides than on the top. See the attached screenshots. The affected blocks include those at certain nonadjacent pairs of X and Z coordinates. The Y coordinate doesn't seem to matter, There is no obvious pattern to the affected X/Z coordinate pairs, except that I haven't seen any horizontally adjacent ones, and it doesn't appear to affect blocks over a very large area. The darker color resembles the grass color in a swamp.

Yes, this still occurs in 1.16.201. I downloaded the previous demo world and found it still contains discolored blocks. To double check, I created a duplicate of it (same seed) and opened it. It also has discolored blocks. I have attached a copy of the new demo world and a screenshot from it:

This happens to me even on infinite worlds. It is not an issue with the colormap because I use a texture pack with a solid colormap (should have no biome variation) and this problem still occurs.
