The new villagers are keeping their old trade options when they switch professions. i.e. a Fishman trades arrows, shovels, and bricks, and a Leatherworker trades string and iron helms. Sometimes the villagers do not have the new trades of their new profession available.

I don't understand the logic of this new trading/profession system. If they claim a block, e.g. Grinder and become a weapon smith, you can take it to the highest tier, in this case axe, but when you introduce farmland it will suddenly relinquish the grinder and become a farmer. The difficulty here is that it retains all of its old trades so you have weapon smith wandering around dressed as a farmer - doesn't make sense! But that is what Wiki says! The opposite is also true. A fully fledged farmer can suddenly become something else but retain all the old farm trades. So I have a tool smith wandering around but will only trade food. So the premise that it changes profession isn't really true - they change cloths and retain all the trades that you have previously made with the villager. I have finally found a use for name tags! Oh, and farmers don't really farm so all my automated farms are broken too. Hope they sort this out because it is mind blowing and wastes a heck of a lot of time!
