I took over a village, added a ton of doors a while back and bread around about 30 - 40 villagers. I had worked with a friend to get them moved into a trading center and now after the upgrade to 1.11.0 they are all useless. This is on a survival hard realm.

@unknown: In case you didn't know it, doors are no longer what creates a village; beds are. You need to provide beds (and also workplace blocks) for your trading hall villagers. However, this won't prevent them from losing their trades, because the new trading system has incompatibilities with the old one, so all villager trades are reset when old villagers get converted. On the other hand, it's now possible to choose what professions they get by choosing what workplace blocks you provide for them.
@unknown: The problem in your last paragraph happens when villagers you weren't expecting to, have claimed the beds or workstations. They're probably villagers who used to be too far away to detect the village. The village radius is no longer a limit for this purpose: Any villager in your player ticking area (the "loaded chunks" in Java terms) can detect any village in them and can then claim blocks within it. You'll know that this is what happened if you find distant villagers who inexplicably have the professions for the workstation blocks you placed.

Those aren't nitwits, they are "unemployed".
In 1.11.0, if a villager doesn't have a claimed workstation block, they don't have a profession. In theory, if you put the right workstation block in front of these villagers, they'll claim it and get their profession back.
In practice, there's not a good way to guarantee the villager you want will claim it, so you pretty much just lost our trading hall. Heck, in my village I have claimed beds and claimed workstations but every villager is unemployed.
