Used to, when I was trading with a villager for something like an enchanted book, I could move my cursor over the book to see what enchantment I'd get.
Since the 1.11.0 update, this is impossible. If I try to move the cursor out of the trade list, the list resets to "no trade" so it's impossible to tell what enchanted book I will get before making the actual trade.

I +1'd the vote on this. I see the exact same issue. There's no "snap-to" box for the items on the right of the trade arrow.
@Kyle you can’t view locked tier books on any platform, you have to unlock the trade to see what it is. This bug report is specific to the Nintendo Switch controls.

It turns out you can do this, but it's very difficult to pull off.
First, you have to scroll to exactly the trade you want. This puts the cursor over the arrow between what you're "paying" and what you get. Then, you have to *carefully* use the right stick to slide the cursor over to the result. There is a very, very narrow hitbox and if you go 1 pixel too far you skip straight to your inventory.
This should really use the d-pad or not be so fidgety.
