Since the last update on iOS, I haven't seen pillager patrols spawn/ or outpost.

This ticket is duplicate of MCPE-44344 relating to illager patrols. Please make a comment or bring more vote into a ticket.
You might want to create a separate ticket for wander trader or search for existing ticket. I have no problem with wander trader.

Pillager patrols aren't spawning on our Realm either, but I have seen the Wander Trader a few times.
