Xbox one with newest update
With the newest update to xboxone Beta you can no longer make beds from scratch using 3 wool and 3 wood planks. Every bed build recipe is just take an existing bed and dye it.

I have this same problem now. I was able to build beds in the past, but now it's impossible. Having done a little bit of research, I noticed two bed icons exist, one with sharp edges and one with rounded ones. On the wiki page the rounded one is called Bed BE. In the list of all items I can only see beds with rounded edges and all of them require an existing bed to be crafted.
I should add that I§m using the Win 10 version
