If you dig a 1x1 tunnel while you are on flowing water, you can swim without any water. This is not the official"crawling feature" that was added on the Java Edition. Yes, crawling is a feature on Java Edition but don't get me wrong, it wasn't added yet to the Bedrock Edition.
How to Reproduce
1. Find a river
2. Dig a 1x1 tunnel
3. block the flowing water with any block.

I feel like this would be closed a 'Invalid' because this could be mistaken as a "feature request or a suggestion", 'Won't Fix' or 'Works As Intended'.
Last time I tried this you would get up from the water and you would suffocate in the block above you.
iirc it was on some beta of 1.11
I'm pretty sure this is intentional because this keep's the player from suffocating until you're in a safe space. This used to happen but then they fixed it in 1.11 to keep the player from X-raying.
@Euwill Eusebio I guess crawling has (possibly) been officially added, but you crawl fast and you can't even use trapdoors. That's the downside of this.
So from what I'm gathering here. I predict that what's going on is that (On Java) the game knows about the amount of space you are in and the game will automatically adapt the model of the player to fit that size. This makes it fully manipulatable by using blocks (trapdoors, slabs, snow layers or pistons). (On Bedrock)The game knows about the amount of space you are in and once you "fit" in the space, it will continue to use the same model despite not meeting the requirements to have the model (Water = Swimming animation model) until the space support's the prefered model (which is standing up because in Bedrock you cannot sneak under 1&1/2 Blocks). However, the game will not automatically adapt to any changes in available space making it unmanipulatable.
Close this as "Works as Intended".
This also works on the Java edition of the game. Think this one's intentional, friend.
