As I entered my jungle I came across a 1 panda which gave me hope of finding a bamboo jungle. As I spent around half an hour searching I sadly found no Bamboo Jungles and this is also the new 1.11.4 update. As I've heard if you stay in an area for 5 minutes it may be considered your home so no new structures wil be generated there, well I was only in the jungle biome area once and was there less then 2 minutes and only went to get cocoa beans and tame and ocelot. Not sure if there is a solution or if this is a bug, but any advice is accepted. Quick Note: As I traveled around my world I couldn't find any closest jungle to me, most jungles are very far away, the one I found was around 2,500 blocks away which is pretty far away in survival if you ask me(my opinion).

In most case, the mob isn't affected by chunk saves on terrain and structure. Mob spawning conditions check for eligible block to spawn on and if it is a biome dependent and whatnot.
Edit: I might be wrong if panda only spawn in bamboo forest. I have not spend time observing generated jungle before bamboo forest update that would spawn panda in the biome. Also, I noticed there are some isolated bamboo trees (1 tree) across jungle. That might be where panda spawns.
Someone will shed a light if panda can spawn in jungle, perhaps rare. Idk
But how is that?. Once an area was generated by your seed it will remain as you explored it forever. I mean... if in a jungle you don't see bamboo jungle, you have to search another jungle untill you find it. As fas as i know structures and map is generated always in same positions based on your seed.
If you want to find bamboo, explore for more jungles.
And I can confirm, pandas can spawn in every jungle.
Also you can also find a single bamboo shoot out the jungle without the forest itself. They grow fast I think.
You're right. I was trying to breed 2 pandas for achievement yesterday and only thing that I've found was bamboo(not forest) just 6m high bamboo

You might want to kill passive animals to free up the cap and allow room to spawn new animals in jungle area.

I don't believe under 5 minutes of visiting the area wouldn't permanently save chunk to the disk. It is based on simulation distance radius which will save chunk to the disk once the player move the simulation distance around.
I would have notice that if I were to fly at max speed across the world, save and quit immediately, and return to world listing. The file size of the world wouldn't be that much. But, that doesn't happen.
