When I load up everything is fine up until I get to the main menu screen. It only shows the rotating background picture without a menu.

I think you just must wait to the appearing the menu. And on my phone there is the same bug, but when I wait about 5 seconds the menu is appearing and all is right.

I have found that it is the AMD cards that are doing this due to a rendering glitch. The way I fixed the issue after installing the latest AMD drivers and it still wasn't loading correctly.
>Install the latest AMD driver [I had better luck with the beta version personally].
>Load the AMD software
>Select the tab above labeled "GAMING"
>Select Minecraft below
> I Had Success with these settings
>Graphics Profile (Custom) >AMD FreeSync (On)
>Radeon Anti-Lag (Enabled) >Scaling Mode (Global Setting Default)
>Radeon Chill (Disabled) >Integer Scaling (Disabled)
>Radeon Image Sharping (Enabled) >Launch with AMD Eyefinity (Disabled)
>Sharpness (80%) >Custom Colors (Disabled)
>Radeon Enhanced Sync(Disabled)
>Wait for Vertical Refresh (Off, unless specified )
