In my player-created village, villagers repeatedly despawn. It is surrounded by a wall that can't be climbed over, and it is flooded with light to prevent any mobs from spawning inside the wall. Multiple iron golems patrol inside as well. My point is that there is no in-game reason for me to be losing villagers. However, nearly a dozen villagers have disappeared since the village was populated. They would be born and become adults, but if i ever saved and quit or ventured far enough for the village to disappear, then a few would be missing when i returned. Which ones disappear seems to be random. I have tried to keep them breeding as much as possible to prevent my village from completely dying out, but losing multiple master level traders is frustrating. The switch version seems to be less optimized in general, so i would guess it has something to do with the game glitching when it tries to load the mobs in. Cows, pigs, and iron golems have persisted well while chickens, sheep, and mainly villagers have not.

I think I am getting this same issue on Windows 10 as well. I now have had 4 villagers go missing. I suspected the first were taken by zombies or spiders as they were in a iron farm/trading hall, but then I realized there was no way that anything could have gotten in and ofc there was nothing in the pit afterwards. Then, just now I had a master farmer totally disapear RIGHT after my game had crashed. Again, there is no way anything got in as he was trapped with a 2 high wall and fence on top of it... so.. totally a despawn. This is getting frustrating.

I have this issue as well on iPad. Generally after 3 Minecraft days there’s only 1 villager left. Villagers also are changing professions and disappearing after being named and traded with!

Loaded my world and noticed that two of my villagers (who I made a home for and have locked in) have disappeared.

Same, I just came here to say this. I logged in today and a good portion of the village had despawned and the rest were makin' babies before my eyes. No additional beds had been put down in between logins.
Between this and the other bugs that have been happening to my village, I'm frustrated to the point where I don't want to play for now. Might come back when it's fixed finally :/

This ticket describes the issue tracked at MCPE-21416. The resolution as invalid appears to be incorrect as the description makes no mention of a crash.
Same thing is happening to my village on xbox. Had several villagers disappear. Now some new babies have grown up and are not taking any positions. I have plenty of work stations and my village is 100% protected. They’re not nitwits either.
