While exploring during the day mobs will spawn in with the terrain. They'll automatically catch on fire and die after awhile unless spawning in with armor making it just as hard as exploring at nightÂ

I don't think that's was causing it, I do have my distance settings 7 chunks which depending on how fast I'm running threw the map could cause them to unload in the same location, but ive been speed running around exploring and mapping new areas and I know for a fact i haven't been to most of the new terrain at night, so it shouldn't give them a chance to load and unload staying in unexplored territory. But I'll keep in mind for that possibility while exploring

Could it be that they were spawned there while it was dark? In Bedrock Edition, mobs get saved to their location when their chunks are unloaded. So when you return to the area in the daytime, it may just be loading back the old mobs.
