When i cure zombie villager, he change his profession to Cartographer, but when i want to change his profession to other, it not change anything. I dont have placed any objects that are used for profession. I try it more Times... But nothing.

Where did your zombie villager come from? Was it
Found wandering in the wilderness?
Found in an igloo basement?
Converted by a zombie attack that you arranged or witnessed? If so, had you or anybody else traded with it before it was converted and cured?
I assume you haven't traded with it since it was cured, since that would lock its profession and trades.

I'm afraid your experiment doesn't tell us anything relevant to this problem. Spawn eggs are meant for making pre-built worlds (so-called "maps") where the creator wants mobs with predictable behaviors and characteristics, so villagers spawned by eggs are intentionally less flexible.
I'll try to find a naturally spawned zombie villager and cure it to see if I can reproduce the problem.

Confirmed on Windows 10 1.12.1. I cured a naturally-spawned zombie villager. It became a cartographer with TradeExperience: 1. Since it had experience, it was no longer able to change its trades.
It looks like this is intentional, because there's no way a zombie villager who has never been a villager could have trading experience unless the game created it that way. However, we will leave it up to the developers to say whether this is intentional.
