I went to extend my scaffolding out so i could walk along it, but when i tried to it would place it going up instead. Even if i placed one on the side of the scaffold and then sneak click.

oh ok Thanks, its just very different from java edition because in that version you extend the scaffolding out by clicking the top scaffold like i tried to do and in the video which is a better way. This still could be a bug but thanks for letting me know about it.

This is technically not a bug. For the first block, just point at the air of your direction and place it, because sneaking will cause you to move down. In the video, you pointed at the scaffolding block, so it goes up instead. You should shift to the edge and place.
