Fixed, as of the new Beta as stated in the changelog.
I can't reproduce using Minecraft for Windows 10. The video I uploaded was a video recorded on an Android device.
Here is my original bug report:
I was trying to exit my secret base by swimming into a 1x1x1 air gap and when I tap the trapdoor, the trapdoor didn't open nor close. Instead, I am able to break blocks outside of the trapdoor. That would make my secret door essentially unusable.
What I expected to happen was...:
The trapdoor should respond when I tap by closing or opening.
What actually happened was...:
Instead, it did not respond. But I am able to break blocks outside of the trapdoor. This works with an iron trapdoor.
Steps to Reproduce:
Build a pool of water (I'll provide a screenshot)
Place a trapdoor at the corner (just like the screenshot)
Swim towards the trapdoor and quickly open and close the trapdoor to enter the trapdoor'S beneath (I might make a clip)
Try tapping the trapdoor. Nothing will happen. Instead, you will be able to break blocks outside of the trapdoor. This would be annoying if it is an iron trapdoor.

Reproduced on Windows 10. In Survival mode, when the Drowned is swimming, they seem to jitter and vibrate/shake while attacking you, which might cause you not able to attack them.
Can you provide the map of your world? Otherwise we can't identify the issue.

Pillagers spawn in patrols. Since Beta - 1.11.0.7, patrols will avoid spawning near players if they are in a village. Does pillagers spawn if you're inside the village?
This is technically not a bug. For the first block, just point at the air of your direction and place it, because sneaking will cause you to move down. In the video, you pointed at the scaffolding block, so it goes up instead. You should shift to the edge and place.

Torches have a light level of 14, which means mobs can spawn six blocks away (excluding the torch itself) from a torch. You should factor that into consideration. Lanterns have a light level of 15.

I can't reproduce. In your screenshot, you're selecting a custom skin, so that might be the cause of it?

This issue doesn't seem to be completely fixed in the latest version. From my observations, this issue is caused by chunks unloading and reloading. For my case, this issue occurs when I go from one dimension to another. Normally when this issue occurs, the loading screen while going to the other dimension would be stuck in "Building Terrain" for a long time. This issue doesn't seem to affect player's inventory. Also, this issue occurs when the Realm is slow, like the TPS would increase. Opening chests would take longer etc...
