Steps to Reproduce:
Place a furnace, blast furnace, or smoker.
Put fuel and a smeltable item in it.
Let the arrow icon fill up slightly and exit the furnace.
Wait 10 seconds or until the furnace shuts off and then open the furnace. The arrow icon will still appear filled.

I can confirm that this also happens on the Xbox One.
Two additional pieces of information:
Items still smelt at normal rate, for example 8 ore for one coal.
Arrow progress bar resets to normal when more items/fuel are added. However, exiting the interfaceand waiting will repeat the issue, as described.
This clarifies that the furnace/smoker remembers the actual progress. It's the UI that isn't updating.

I have been having the issue, just tested it and yep, still there.
Steps to reproduce: Start an item smelting in the furnace. Deselect the furnace. Wait until it is done smelting the item and not lit up anymore. Open furnace, arrow icon is partially full and stopped.
