While playing survival Minecraft I am able to access my inventory and other inventory based GUIs normally.
However once I ride a horse, and try to access my inventory, all inventory based GUIs I try to access afterwards fail. Chests do not open either.
The horse I tried to saddle (through inventory menu) was a plain brown horse.

In order to replicate it all you have to do is open your inventory while on a regular horse. Then get off the horse, and you will be unable to open your inventory. If you don't open it while on it, the issue seems to not exist.
It also affects other players if the host does it.

I believe Mega_Spud managed to replicate it, it turns out that the issue doesn't appear to occur when the world is first created. It works perfectly and only starts to fault after the world has been left and then resumed which is why it was so hard to just jump in and replicate on a new test world.
