When I dye my shulker boxes, if I log out with the Shulker box placed in the world the color of dye is retained when loading the game save. But if the Shulker Box is placed in an End Chest when save is made and then reloaded, all dyed boxes are white upon loading.

Yes, this is in Education Edition. As far as I know I have the most up to date for this type. But it would not allow me to enter the build information for my edition, nor leave that field blank.
Minor update on this:
Wool, stained glass, and concrete powder are also reverting to white versions instead of the color they were dyed to be when logging out and back in to the game. This is happening in normal chests, so is not shulker/end chest specific. Any colored object not placed in the world appears to revert to white (not uncolored) upon loading a saved world.
I loaded back to the game to test for objects kept in player inventory, and green wool on my hotbar promptly reverted to white wool when logging out and immediately back in.

Your affected version says 1.15.0.55 but your description talks about a January build date (far too old to be the 1.15 betas).
