When you are riding mobs and sometimes not you can see your shoulders and it blocks your view. It has been happening for a while now.

Are you talking about 3rd-person view? I'm not sure about the XBox controls, but there should be a button to toggle the view between 1st-person (default), 3rd-person from behind, and 3rd-person from in front. On PC it's F5, on Switch it's the small up arrow button below the left control stick.

I have never noticed this. Are you using a texture pack or custom skin? Could you provide a picture or video?
